Frozen beets retain their nutritional value and beneficial properties. It is convenient to freeze in safe packages (with locks). Regular freezers in refrigerators will do. But a good result is obtained if you use deep freeze chambers. Beets can be frozen puree, boiled, raw and chopped. It retains its characteristics well, even when combined with other vegetables.
Freezing procedure
Beets can be frozen, chopped or whole. For defrosting, you need to free the fruit from the peel, rinse it with clean water and let the liquid drain completely.
The vegetable is crushed into strips, a bar, circles, cubes. You can also grate the beets on a fine or coarse grater.
The root vegetable, cut into pieces, should be immediately placed in bags and sent to the freezer. But there is a risk that the contents of the sachets will freeze into one large lump. Then this mass will be very difficult to use in separate parts. It is better to use a method in which the chopped beets are first gradually frozen on flat surface, and then poured into a packaging bag for long-term storage in the freezer camera.
Vegetables that have been grated or mashed should be put in small containers and placed in the refrigerator. Further, you can use this mass in small volumes for the preparation of various delicious dishes.
Features of freezing boiled beets and tops
Freezing boiled beets is almost no different from the situation with fresh root vegetables. The vegetable is boiled both peeled and in a peel. To boil a vegetable in its skins, you need to dip the beets in cold water so that the water completely covers them. Cooking should take 45 minutes. The duration depends on the size of the vegetable.
Beet greens have many beneficial and nutritious elements. When frozen, most of them are successfully preserved.
With the addition of tops, you can make borsch and other first courses. To freeze the tops, it:
- washed;
- waiting for complete drying;
- cut into strips.
Next, the tops must be packaged in sachets and placed in the freezer.
Preparing the dressing
You do not need to defrost the beets to prepare the first courses. The raw mass should be placed in a saucepan in the middle of cooking, and the boiled mass should be placed in the final stage. For various salads, boiled root vegetables need to be defrosted some time before cooking.
Even if the required temperature in the freezer is observed, you should not store root vegetables in the freezer for more than ten months.
