I always choose cucumbers for winter harvesting based on the following criteria:
- skin color;
- the presence of tubercles and spines;
- sizes;
- the thickness of the peel;
- lack of bitterness.
For the preparation of winter storage, I always choose dark green varieties. As for the thorns, in different varieties they can be white, brown with pubescence, black. It is best to choose fruits with black thorns, as they absorb brine well. And I recommend using fruits with white thorns only for making summer salads. They are not suitable for canning, as they will not be crispy and elastic.
To cover pickles, it is best to use fruits no longer than 10 cm. They look beautiful in jars and are easy to eat. But large cucumbers will be difficult to get out of the jar and will have to be cut into pieces. Those varieties with too thin skin are also not suitable for winter harvesting. Also, I do not recommend using cucumbers with bitterness, as they will simply spoil the taste of the canning.
