In order to preserve as much vitamin C in potatoes, you need to lower it in boiling water - in this case, the loss of vitamins will be minimal.

If you cook potatoes for salads, then you need to cook it in a peel, moreover, all the potatoes in the pan should be about the same size. If you are preparing mashed potatoes, then it is better to cut the tubers into pieces - this way they will cook many times faster.
