Good afternoon, my reader. Sometimes you don't need to spend too much time to prepare a very tasty vegetable preparation. The same squash salad flavored with mushrooms can be made in just a few hours. And if you take someone from your family (for example, a husband or children) as your helpers, then you will cope even faster. After all, working in several hands is both easier and much more fun. But enough of the lyrics, let's get down to our salad.

Zucchini and mushroom salad

Products: - zucchini - 500 g, - mushrooms - 500 grams, - onions - 200-300 g, - vegetable oil - 150 ml, - table salt - 1 tbsp. l., - sugar - 1 tsp. l., - vinegar (9%) - 50 ml.

Cooking method

I personally take oyster mushrooms for such a marinated salad. Because they grow near my garden plot. But, of course, you can safely take some other mushrooms.

  • Rinse your forest mushrooms. Separate the caps from the stalks, thus dividing the mushrooms into parts.
  • Pour water into a saucepan and place it on the included hotplate. Bring to a boil, lightly salt and place the cooked mushrooms in a container.
  • After boiling the mushrooms, drain them from the pan into a colander and let all the water leave the forest gifts.
  • Next, clean the head of the onion and chop it with full rings.
  • Now wash the zucchini. If you have old ones, be sure to cut off the skin. Although I, for example, usually make a young zucchini. It is very gentle and not rigid at all. Next, we shred our neat zucchini.
  • Cooking jars for preservation. Everything is as usual here. First, wash, then sterilize, let dry. We also boil the lids. When the container is ready, we begin to lay out the rows of the future workpiece in it.
  • We put onion rings first. Then zucchini rings. Then add the boiled mushrooms. And we repeat this laying the layers until the cans are completely filled.
  • Now we begin to prepare the marinade. Pour one liter of water into a saucepan and place it on the hotplate. We turn on the fire on the tile and pour sugar and salt into the container. Then pour in the oil and bring the liquid in a saucepan to a boil.
  • When the future marinade boils, pour all the vinegar into it and after a few seconds remove it from the tile. Next, pour the layers of vegetables in the jar with hot marinade and, closing them, put them on sterilization in a large saucepan filled with water.
  • After waiting another 15-20 minutes for sterilization, remove the cans from the pan and immediately roll up the lids on them.
  • Place the cans over the lids to see if they are leaking. If everything is in order, then let the blanks cool down. And then you can put them away in a secluded and cool place for storage. Done!
