This appetizer got its interesting name due to the fact that zucchini in it are cut in the form of small plates, which are somewhat reminiscent of large tongues. If this method of slicing is very difficult for you, you can chop the zucchini into circles or make them just ordinary slices. Despite the seeming abundance of ingredients, this blank is pretty easy to prepare. And its final version, without any doubt, will give you real pleasure.

"Mother-in-law's language" from zucchini

Required products: - fresh zucchini - 1.5 kg, - tomato juice - 700 ml, - sunflower oil - half a glass, - sugar - half a glass, - sweet pepper - 1.5 pcs., - garlic cloves - 30 g, - chili pepper (for spicy lovers) - half, - vinegar (9%) - half a glass, - mustard - half Art. l., - salt - 1.5 tbsp. l., - tomato paste - 1 tbsp. l.

Cooking method

  • Wash zucchini thoroughly. If they are already tough, then remove the peel from them and cut them into slices, similar to tongues. To do this, you just need to cut the entire zucchini across, and then chop small and even plates along it. These plates should be about 10 cm long and one and a half thick.
  • Next, pour tomato juice, oil and vinegar into a saucepan. Add mustard and tomato paste. Sprinkle salt and sugar.
  • We wash and clean all the peppers and garlic. Grind them with a meat grinder (blender). If you are not a fan of spicy dishes, then you can do without chili here.
  • Transfer the resulting porridge to the tomato mixture. Mix everything thoroughly and place the pan on the included hotplate.
  • As soon as the marinade boils, pour our zucchini tongues into it. We reduce the heat slightly and stir the brew, waiting for it to boil again.
  • After the water in the pan boils again, we cook our workpiece for exactly 40 minutes over low heat.
  • Next, we sterilize the jars and put hot zucchini from the pan into them. And pour these vegetables with marinade on top. Then we roll up pre-boiled lids on the jars, turn over the glass containers and cover them with a warm blanket, thick shawl or blanket.
  • Let the blank cool completely. All. The dish "Mother-in-law's tongue from zucchini" is ready!
