The benefits of walnuts

Walnuts are exceptionally balanced in composition. The ratio of minerals, vitamins and proteins in them is almost perfect. The fats in nut oil are unsaturated and therefore safe for blood cholesterol levels.

Nuts are especially useful in winter and early spring, when vitamin deficiency and lack of sun undermine health. This is why it is important to keep the kernels as long as possible.

Store in shell or peeled?

If the nuts are not grown by your own hands on the site, then when buying you have to choose what to take - already peeled or still in the shell. Each option has its own advantages:

  • Peeled kernels take up less space. In addition, you can immediately see if the product is of high quality. Unfortunately, the inshell nut can be dry or moldy on the inside.
  • In-shell nuts keep much better. If they were properly dried, and then lay in a dry and dark place, then they retain their properties until the next harvest.

If you are buying inshell nuts, make sure they are of good quality. Here are a few signs to look at:

  • whole shell without chipping and cracking;
  • tightly fitting halves;
  • when shaking, there should be no rustling or movement inside: the kernel of a healthy ripe nut is firmly held in place;
  • no putrefactive odor or mold stains.

Storing nuts in their shells is very simple: put them in a wooden or cardboard box or a bag made of breathable fabric and put them in a dark and dry place (like a closet). There, properly collected and dried nuts will lie for at least six months without rancidity or rotting.

Storing shelled nuts

When storing peeled walnuts, remember: they are completely defenseless against moisture. The moisture that the shelled fruit ignores will be absorbed by the peeled one. As a result, at best, the kernels will start to grow (this is the method used by some nut growers for the rapid germination of nuts on seeds - they soak already peeled kernels). At worst, it will mold or rot.

The second mistake is the purchase of a large amount of peeled nuts for future use. Remember: this product is extremely poorly stored without the shell. Take as much as you eat in 2-3 weeks. And if whole kernels can still lie for up to a month, then the crumbled ones quickly become unusable.

The third and most important mistake is storing nuts in a plastic bag. "Suffocated" kernels quickly deteriorate. In just a few days, they will become inedible.

But this does not mean that peeled nuts cannot be stored at all. If you really need, you can use the following methods:

  • Pour kernels into paper bags or boxes, then place in the refrigerator.
  • Freeze kernels. In this case, they will retain the maximum properties. But remember that the cycle "freeze-thaw" must be one - the second time the nuts turn into porridge. Therefore, freeze them in small portions for consumption at a time.
  • Burn the nuts. In this case, sprouts in the nuclei are killed, and at the same time mold spores and insect larvae, if any. Then the peeled nuts can be stored for a month and a half in a linen or paper bag in a dry place. However, calcination destroys not only pests, but also a significant proportion of vitamins.
