For long-term storage, you should take a responsible approach to the parameters of the product. As a future aid for a tasty seasoning, you should choose only strong, even roots that do not have traces of damage. The surface of the horseradish should be light, while the cut should be rich in white.

However, when choosing suitable roots, you should pay special attention to other equally significant nuances. For example, the optimal plant age is 3 years. During this period, horseradish managed to acquire sufficient pungency, but at the same time did not lose its taste. Properly matured roots must be at least 20 mm thick.

In order not to violate the properties of the workpiece, you should carefully consider the way it is stored. It is not recommended to keep horseradish roots together with other vegetables, soak them, drop them or leave them outdoors.

Storage method

The most favorable place for horseradish storage is the cellar. There the root does not lose its freshness for the longest time. Those who like this method will first need to make all the preparations. A box with sealed sides and bottom and coarse river sand form the basis for proper storage of horseradish root in the cellar. The selected roots must be cleaned of soil residues. Pour sand at the bottom of the box with a layer of 8 cm, and lay the roots on top in rows. The final step is to fill in the second layer of sand, the rise of which above the laid roots should be about 4 cm.

Note: the roots should not be in contact with each other, but the distance between them cannot exceed an interval of 3-5 cm.

In the absence of a cellar, you can use a basement or a warmed loggia as a storage place for horseradish roots.

Storing horseradish roots at home

Situations are not uncommon when horseradish has to be stored at home due to the lack of other suitable places for this. In this case, there are two methods: store it in the refrigerator or dry it.

The first option has a short shelf life - in the freezer up to 5 months, in the main department up to 3 weeks. The second one is notable for its special convenience in preparation, but at the same time the lack of the possibility of preparing traditional Russian seasoning.
