Beet dressing
Despite the simple cooking technology, a very aromatic borsch dressing is obtained.
Ingredients:
- beets (preference is given to vegetables with a pink heart, but the burgundy variety is also suitable) - 3 kg;
- juicy medium-sized carrots - 1 kg;
- refined vegetable oil - 0.2 l;
- ripe tomatoes - 1 kg;
- Bulgarian pepper - 1 kg;
- filtered water - 0.5 l;
- medium-ground salt - 3 tbsp. l .;
- table (9%) vinegar - 100 ml;
- granulated sugar - 7 tbsp. l .;
- medium bulbs - 2 pcs.;
- parsley, dill - small bunches of fresh herbs.
This amount of ingredients is designed for 9-10 500 ml cans.
Preparation:
- The washed beets and carrots are peeled and then chopped with a coarse grater.
- Cut the onion into medium cubes.
- Peeled peppers are chopped into thin strips.
- The greens are crushed.
- Scalded with boiling water and chilled tomatoes are freed from the skin, and then chopped finely.
- Carrots are fried in a thick-walled saucepan in heated oil for 5 minutes. Add onion and cook again for 5 minutes.
- Pour in water, and then add the beets.
- Stew vegetables for 15 minutes. Then put the tomatoes and peppers. With stirring, add sugar and salt, pour in vinegar. Cook for 10 minutes.
- Add herbs and stew until cooked for another 10 minutes.
Distribute the hot mass into sterile jars. Roll up quickly. Keep under a blanket until cooled. Store in a home pantry.
Dressing without beets
The delicious borsch dressing can be prepared without the traditional beetroot.
Ingredients:
- ripe red tomatoes - 500 g;
- onions - 500 g;
- juicy orange carrots - 500 g;
- juicy fresh parsley - 1 small bunch;
- sweet bell pepper - 500 g;
- medium grinding salt - 500 g.
Preparation
- Peeled carrots are chopped on a coarse grater.
- Onion heads without husks are cut into thin strips.
- Peeled tomatoes are finely chopped.
- The seedless pepper is cut into small pieces.
- Chop greens finely.
All vegetables are put in a deep bowl and mixed with salt. Withstand 10 minutes, and then distributed in sterile jars. Store under nylon caps cool or at room conditions.
Dressing with beans
Improves the taste and makes the borsch more satisfying with the beans added during the preparation of the dressing.
Ingredients:
- ripe elastic tomatoes - 5 kg;
- medium-sized carrots without a core - 1.5 kg;
- dried beans - 1.5 kg;
- burgundy beets - 2 kg;
- bulbs - 1 kg;
- refined sunflower oil - 200 ml;
- sweet pepper - 1 kg;
- medium fraction salt - 5 tbsp. l .;
- table (9%) vinegar - 200 ml;
- dill, parsley - small bunches of fresh herbs.
Preparation:
- Skinless tomatoes must be minced.
- Carrots and beets are chopped using a coarse grater.
- Finely chop the onion into rings, and the pepper into strips.
- Beans are poured with cold water overnight. In the morning, it must be boiled until tender.
- All ingredients are placed in an enamel pan, pour in oil, add salt and bring to a boil.
- After 40 minutes of cooking with medium heat, add herbs and pour in vinegar. Finally stew for another 5 minutes and remove from the stove.
While hot, the dressing is distributed among the cans and sealed.
Dressing with celery
You can make a spicy dressing with a great taste if you add celery.
Ingredients:
- bulgarian pepper - 1.5 kg;
- medium-sized carrots - 10 pcs.;
- onions - 6 pcs.;
- celery rhizome - 1/4 part;
- garlic heads - 2 pcs.;
- parsley, dill - small bunches;
- coarse salt - 200 g
The volume is designed for two liter cans.
Preparation:
- Peeled carrots are rubbed coarsely.
- Onions, celery, peppers are chopped into thin strips.
- The garlic is cut into small slices.
- Chopped greens.
- Put the vegetables in a deep bowl and mix with salt.
Half an hour after the appearance of the juice, lay out the dressing in sterile jars. Kept under plastic lids in the refrigerator.
