All dishes are prepared according to the recipes below for no more than an hour, but you need to pay attention to some trifles:
- Small gherkins no longer than 10 cm are suitable for canning. They are well saturated with juice, it is convenient to work with them, and more of them fit into the jar.
- The recipe requires tomato juice or a paste, so access to fresh, meaty tomatoes that are easy to puree and peel off is essential.
- All cans must be steam sterilized or oven baked.
- You can store the product in a closed cabinet, away from heat and light. So cucumbers in a tomato can lie for a year or more.
REFERENCE: The easiest way to peel the tomato skins is by first scalding them with boiling water - then it will be easier to come off.
Cucumber in tomato recipes
In tomato sauce
You will need:
- Cucumbers - 1 kg.
- Fresh tomatoes - 1 kg.
- Salt - 2 tbsp l.
- Sugar - 1 tbsp. l.
- Pepper to taste.
- Potato starch - 1 tsp l.
Tomatoes are peeled and ground in a blender or juicer until they become a smooth paste. Then the resulting mass is heated in a saucepan over a fire, sugar and salt are added, after which the sauce is boiled for 15-20 minutes over moderate heat. Then add starch, heat for another 5 minutes and, covered with a lid, leave to cool slightly.
While the sauce is cooling, the washed cucumbers are placed in the jars. Then they are poured with sauce, covered with lids and sterilized in a tank of water for 15 minutes. After that, the lids are rolled up and the cans are turned upside down and wrapped in a blanket. After the jar has cooled down, it can be stored in a cool place. You can eat in one and a half to two months - then the cucumbers will infuse properly, become sweeter and spicier.
In tomato paste
You will need:
- Cucumbers - 1.5 kg.
- Tomatoes - 1.2 kg.
- Garlic - 2-3 large cloves.
- Salt - 2 tbsp l.
- Sugar - 1 tbsp. l.
- Food 6% vinegar - 1 tsp l.
- Pepper, cloves to taste.
Tomatoes are ground and strained through a colander (or better - gauze) from seeds and peels. The juice is boiled in a saucepan, adding spices and vinegar.
While the juice is boiling, the tips of the cucumbers are cut off, and then they are laid out in jars. A garlic clove is placed in each jar, cut into 2-3 pieces. Then the jars are poured with tomato juice with spices, sterilized for 10-15 minutes, cooled and sent for storage.
Without sterilization
Jars should not always be sterilized in boiling water before storing them. You can simply add more vinegar and salt, as in the recipe below.
You will need:
- Large tomatoes - 5-6 pieces.
- Cucumbers - 1.5 kg.
- Vinegar 9% - 1 tbsp l.
- Salt - 2.5 tbsp l.
- Sugar - 1 tbsp. l.
- Black pepper not ground - to taste.
- Garlic - 3-4 cloves.
The tips of the cucumbers are cut off and laid out in jars to the very top. Peas of pepper and garlic cloves are placed between the cucumbers.
Tomatoes are ground in a blender or meat grinder, and then the juice is separated through a sieve. The liquid is boiled for 10 minutes, then sugar, salt and vinegar are added. Without cooling, pour cucumbers with the mixture and immediately seal the jars.
IMPORTANT: If you wish, you can replace vinegar with citric acid - then you will need to add about ½ hour to tomato juice. l. powder.
With bell pepper
You will need:
- Cucumbers gherkins - 2 kg.
- Large tomatoes - 5-6 pcs.
- Sweet bell pepper - 2 pcs.
- Salt - 2 tbsp l.
- Sugar - 2 tbsp. l.
- Ground black pepper - 0.5 tsp l.
Juice is obtained from tomatoes using a blender or juicer and boiled over low heat for 10-15 minutes. Add sugar, salt and pepper 3 minutes before cooking.
The ends of the cucumbers are cut off and placed in jars. Bulgarian pepper cut into slices is placed between the layers. Then the cans are poured with juice, sterilized in a water bath for 10-15 minutes and rolled up. After cooling, the jars can be stored. The appetizer will gain full taste in 3-4 months.
REFERENCE: If you want the pepper to be softer, you can scald it with boiling water before placing it in the jar.
With onions and garlic
You will need:
- Cucumbers - 1.5 kg.
- Tomatoes - 1 kg.
- Onions (sweet or bitter - optional) - 2 heads.
- Garlic - 5-6 cloves.
- Sugar, salt, vinegar 6% - 1 tbsp. l.
Juice is obtained from tomatoes and boiled over low heat. After boiling, add sugar and salt, stir, boil for another 15-20 minutes, after which vinegar is added.
While the juice is boiling, the onion is peeled, cut into half rings, and the garlic cloves are cut into slices. Cucumbers are cut off the tips, put in a jar, alternating with onion half rings and chopped garlic cloves. Then the jar is poured with boiling juice, sterilized in a water bath for 15-20 minutes and rolled up.
REFERENCE: To make the appetizer less bitter, you can hold the onion in boiling water for a couple of minutes, and then drain the water. It will become softer and softer in taste.
Classic recipe
You need
- Cucumbers - 1 kg.
- Tomatoes - 1.5 kg.
- Garlic - 2-3 cloves.
- Onions - 1 head.
- Carnation - 3-4 umbrellas.
- Black pepper - 3-4 peas.
- Deodorized sunflower oil - 2 tbsp. l.
- Sugar - 1 tbsp. l.
- Salt - 1 tbsp l.
- Fresh dill - 2-3 inflorescences.
Finely chop the onion and sauté in a pan until translucent, then allow to cool slightly.
Tomatoes are peeled, cut into cubes. Then they are ground in a meat grinder and filtered from solid parts through a sieve. Then the sautéed onions are added to the tomato mixture and set to boil for 20-30 minutes until the liquid thickens. Salt, pepper and oil are added to the juice.
Cucumbers are washed, dried and trimmed. Then they are tightly placed in a jar, adding dill, garlic, pepper and cloves between layers. The filled jar is poured to the top with the tomato mixture and sterilized for 15-20 minutes in a water bath.
The cooled cans are laid for storage. The appetizer will be ready in 2-3 months.
As it is

- As an independent dish.
- As an addition. Cucumbers in tomatoes are great for young potatoes of the next harvest, and in winter they are very good with fried mushrooms.
