Ripe eggplants are cut into small slices and fried in oil, and then mashed garlic is wrapped in them. Then they take the tomatoes and fry them with the onions. Eggplants with garlic are transferred to a jar with tomatoes and onions and closed tightly in it.

This dish has an unusual taste and is an excellent preparation for the winter.

Before preparing this snack, it is necessary to properly clean the jars, as well as heat them, so that later the fermentation process does not occur and mold does not form. Many people process jars in the microwave at high power for 1-2 minutes. The edges of the dishes must be even and clean, so that the tightness is not broken during canning.

Secrets of cooking "Mother-in-law's language"

Ingredients:

Eggplant, 1 kg

  • Fresh tomatoes, 2 pcs.
  • Onions, 1 pc.
  • Garlic, 3 wedges.
  • Pepper peas, 2-3 pcs.
  • Vegetable oil, 100 ml.
  • Vinegar, 50 ml.
  • Salt, 15 grams.

To make this dish, rinse the eggplants first and cut them into medium-thick slices. Then place the eggplants in a skillet with oil and fry them for a minute, turning from one side to the other. They should soften a little, but at the same time, vegetables do not need to be brought to a "crust" state.

Next, rub the garlic on a fine grater and mix it with salt. The main thing is not to overdo it with salt, otherwise all the best taste of the dish will be lost. Spread garlic on both sides of the eggplants and gently roll up.

Then remove the husk from the onion and cut it into rings or cubes. Try to cut the tomatoes into cubes and mix them with the onions.

Fry the resulting mixture in the same pan for 2 minutes where the eggplant was cooked.

All vegetables must be laid out in layers in the following order:

  • the first is peppercorns;
  • the second is eggplant with garlic;
  • the third is tomatoes and onions.

This procedure should be followed until the jar is completely filled with vegetables.

If you don't want the snack to be too hot, don't add too much black pepper to it.

At the end of the entire cooking process, add a tablespoon of vinegar to a 0.5-liter jar and seal it tightly so that air cannot enter.

If all preservation conditions are met, the "Mother-in-law's language" snack will stand until deep winter, and it can be served at the festive table.
