For any marinade, it is best to use vegetables that you recently removed from the garden. Next, we process the vegetable, namely, remove the tops and root, leaving a small tail. It is necessary to wash everything thoroughly. Next, we take out suitable dishes and boil. There are two options: the first - you can boil the beets until half cooked for its greater benefit, the second - boil until fully cooked, the marinade will be tastier. Both options will not disappoint you, but will taste slightly different. Next, we cool the vegetables using running water, cut off the peel along with the spoiled areas and follow the recommendations for preparing various marinades.
The marinade is prepared as follows: water is poured into a separate saucepan, all the necessary ingredients are placed and brought to a boil, stirring constantly. The resulting marinade is poured into ready-made and sterilized jars with beets, and the jars are also tightened with sterile lids. For better storage of beets, some housewives like to sterilize the jars additionally. In an open container with boiling water, put cans of beets, covered with lids, liter - 15 minutes, half-liter - 12 minutes, and then they are already twisted. In any case, beets keep well.
After that, the cans are turned over and placed on the floor until they cool completely. Banks must be covered with a warm blanket. When the jars are cold, they are ready for storage for the winter, we put them in the cellar.
RECIPES FOR COOKING BEET MARINADES
For this recipe, you will need the same ingredients as for many other blanks: vinegar 9% - 2 tbsp. spoons, sugar - 2 tbsp. spoons, add salt to taste, mostly not iodized. According to this recipe, the vegetables themselves are boiled already in the finished marinade for 1 hour over medium heat, then put them on a plate, allow to cool, cut and stack them in jars, pouring the same strained marinade.
Beetroot with horseradish
Here, too, everything is simple. We rub the pre-cooked beets and put them on the banks. Next, fill all the cans with beets with marinade, for the preparation of which you will need: 1 liter of water, 1 tbsp. a spoonful of sugar, vinegar, salt. Add horseradish roots to taste.
YOUNG BEET FOR WINTER
This recipe is quite simple and can be prepared very quickly. We take 1 kg of young beets, prepare them, and then prepare the marinade. For the marinade we need: 1.5 cups of 3% vinegar, sugar, salt - 1 tbsp. spoon, a pinch of cinnamon and nutmeg. We put ready-made root vegetables in jars along with lavrushka, cloves and peppers and fill with ready-made marinade.
KOREAN BEET
This recipe differs in that you do not need to boil the beets. We grate it, add garlic, coriander, salt, pepper, sugar and mix everything well. Then add vinegar and mix thoroughly again. In a separate bowl, heat the oil and pour it into the bowl prepared earlier. We also mix everything thoroughly. We put it in the refrigerator for 6 hours, and voila - a delicious snack is ready to please your beloved family members.
