How to make a harvest of tomatoes for the winter so that they taste indistinguishable from fresh ones

This is probably the simplest piece you can imagine. After all, it has only two ingredients: tomatoes and water. You just need to put the fruits of tomatoes in jars and sterilize them. In this case, the workpiece is stored all winter not due to vinegar, salt or sugar, but due to sterilization.

Tomatoes prepared in this way are completely different from the usual preparations for the winter - their taste almost identical to fresh fruit and great for adding to salads, soups, pizzas, sauces or scrambled eggs.

List of required ingredients:

  • fresh fruits of tomatoes (absolutely any varieties and sizes of your choice are suitable);
  • clean drinking water.
Rinse the tomatoes thoroughly and dry them by gently blotting out the moisture with paper towels or a kitchen towel. Alternatively, you can simply spread the washed fruits on napkins and leave them to dry.

Using a sharp knife, cut the tomatoes into large slices, having previously removed the trace from the stalk from them.

Bring clean drinking water to a boil and let cool slightly. Sterilize all glass jars and lids prepared for packaging tomatoes and cool them. After that, start unfolding the fresh tomatoes previously cut into slices into sterile containers. When everything is ready, fill the cans to the top with boiled water that has already cooled down.

At this stage, it is necessary to sterilize future workpieces using an elementary homemade sterilization device. Take a pan with the largest diameter possible and cover its bottom with a cloth previously folded in several layers. For this procedure, only cotton or linen fabrics are suitable. Place the tins of tomatoes loaded in them on a cloth napkin and cover them with lids, but do not roll them up yet. Pour the containers in a saucepan with water approximately “shoulder-length”, then turn on the heat under the pan and wait until the water starts to boil in it.

For full sterilization, it is necessary to stand in boiling water:

  • 0.5 liter cans - from 10 to 15 minutes;
  • cans with a capacity of 1 liter - from 15 to 20 minutes.

After the required amount of time has passed, carefully remove the jars from the boiling water and screw them tightly or roll them up with metal lids. Turn containers upside down and leave to cool completely.

After the jars of tomatoes have cooled, they can be removed for storage in a permanent place. This type of workpieces does not require a long infusion and you can open them for consumption even the next day - there is no need for time for salting or pickling.

Before serving tomatoes, simply take them out of the water and season with your favorite sauce. They go well with mayonnaise and fresh onions or olive oil and minced garlic.
