Tomatoes marinated with garlic

Cooking method

  • We sterilize the prepared jars in the oven (it is also possible over steam). We wash the lids in a soda solution and boil for 5 minutes. It is advisable to dry the jars themselves before placing tomatoes in them (in the sun or just at home).
  • We start processing the main ingredient. First, rinse the tomatoes well in water. For our method of conservation, small fruits of elongated shapes are better suited. These vegetables will fit more in jars. The size of the cans themselves can be from one liter to three. And since the calculation of products is given only for 1 liter, then increase the amount of ingredients in proportion to the increase in the capacity of the container.
  • We clean the garlic. It is clear here that for small tomatoes it is better to use small cloves of garlic.
  • Next, cut out the stalk of each tomato and make a cruciform incision on this side, into which we insert a clove of garlic.
  • Now we place on the bottom of the cans: dill, currant leaf, black peppercorns and cloves. And on top, tightly put tomatoes and garlic.
  • Then we start preparing the brine. Boil water and pour salt and sugar into it. Stir and bring to boiling water again. Next, pour the brine into the jars filled with tomatoes. You can sterilize the blanks in the oven, or place them in a large saucepan and boil water in it. We sterilize liter cans - 10 minutes, and three-liter - 15.
  • After completing sterilization, add vinegar and, if necessary, add boiled water to the very top of the jars. Next, roll up the containers with lids and turn them upside down. This will check the reliability of the seaming and additionally sterilize the caps.
  • Cover the jars with a blanket, shawl, or blanket. Wait until they cool completely, then put them in a permanent storage place.

Useful Tips

  • If there is no desire to sterilize the jars when preserving, then you can do it differently. Put salt and sugar in the marinade and do not just boil it, but let the water simmer for 10 minutes. Then pour it into the tomatoes and add vinegar at the end.
  • Tipping jars with screw caps is not recommended. This sometimes leads to depressurization of the workpiece.
