Classic recipe
The vegetables are the same, but everyone's taste is different. What's the secret? And it consists in a different way of processing. The classic recipe provides for separate roasting. The ingredients should start juicing. And then everything is mixed together.
You will need:
- 2.5 kg of tomatoes;
- 1.7 kg of carrots;
- 1.7 kg of bell pepper (it is better to take red);
- 5 large onions;
- 1.5 tablespoons of salt;
- 75 grams of sugar;
- half a liter of vegetable oil;
- spices to taste (coriander, cloves, peppercorns are the most suitable).
Rinse everything, chop and separately simmer each of them in a pan. Then put everything together in one large saucepan and cook for half an hour. Stir, cook for another 15 minutes. Pour vinegar there and add spices. Arrange in sterilized jars and roll up.
With carrots
There are many recipes on the internet. We advise you to try the one in which among the main ingredients are onions and carrots. To cook lecho with onions and carrots for the winter, you will need:
- tomatoes - 6 kg;
- sweet pepper - 4 kg;
- chili pepper - 2 pieces;
- onions - 10 pieces;
- carrots - 3 kg;
- sugar - half a kilogram;
- salt - 2 tbsp. spoons;
- vegetable oil - a glass;
- vinegar - 30 grams.
Pass the tomatoes through a blender. Cut the onion into half rings. Mix with tomatoes, add chopped chili. Boil over low heat. Chop and fry the carrots. Add to the pan. Cut the pepper into any pieces, add to the vegetables and cook for 20 minutes. Mix everything and leave on fire for another 15 minutes.
In a multicooker
Increasingly, people are preparing twists for the winter using a multicooker. We offer such a rather original recipe.
Required Ingredients:
- 500 g zucchini;
- 1 kg of pepper;
- 1 kg of tomatoes;
- 400 g carrots;
- 400 g of onions;
- vegetable oil - half a glass;
- a tablespoon of vinegar;
- laurel leaf;
- peppercorns.
Vegetables must be washed and peeled. Remove the stalks from the tomatoes and peppers, remove the seeds from the pepper. Young zucchini is allowed not to be peeled. But if the fruit is already ripe, then it is necessary to cut off the peel and remove the seeds. Grate the carrots with straws and put in a container. Cut the pepper into strips and mix with the carrots. Cut the zucchini and onions into rings, add to the rest of the vegetables. The jar will be packed with vegetables: this is normal. Now you need to simmer for 2 and a half hours. The vegetables will give juice after half an hour and settle. Then you need to add tomato juice.
Pour in the spices and the rest of the ingredients half an hour before the end of the cooking process. 5 minutes before the end of cooking, pour in vinegar, stir. Then put the salad in jars and roll up tin lids until winter.
