Peppers drenched in natural tomato juice look bright and taste beyond all expectations. The proximity of these two components cannot be unfortunate. Below is a selection of recipes for delicious lecho for the winter.
Recipe 1
The easiest and fastest recipe offered. For cooking you will need:
- tomatoes - 4 kg;
- Bulgarian red pepper - 5 kg;
- sugar - 250 g;
- salt - 50 g;
- vegetable oil - 250 ml;
- table vinegar (9%) - 2 tbsp. l.
How to cook:
- Prepare vegetables - rinse and peel.
- Grind the tomatoes until they are as homogeneous as possible.
- Cut the peppers lengthwise into 5-6 long strips.
- Pour chopped tomatoes into a saucepan, add salt and sugar and bring to a boil.
- Put prepared peppers in boiling juice and pour in vegetable oil, bring to a boil again, reduce heat and simmer for another half hour.
- Pour vinegar into the hot mass and mix gently.
For chopping tomatoes, a blender, meat grinder or mixer is suitable. This method does not require additional sterilization, the lecho is ready to be rolled into jars.
Recipe 2
This method will take more time, but the taste will result in a more refined and richer one. For cooking you will need:
- Bulgarian red pepper - 3 kg;
- carrots - 3 large;
- eggplant - 4 medium;
- tomatoes - 3 kg;
- garlic - 2 heads;
- fresh parsley - 150-200 g.
To prepare vegetables, you must first prepare:
- Cut the peppers, remove the middle, place in boiling water for 3 minutes, remove and cool.
- Cut the eggplants into thin strips and place in salt water for half an hour, then fry until soft.
- Grate the carrots, fry, add finely chopped garlic and parsley, salt, simmer for another 5 minutes.
- Mix eggplant and carrots, place mixture in peppers, roll them up.
- Fill the prepared jar with stuffed peppers, placing the vegetables vertically so that there is as little space as possible.
- Chop the tomatoes to a liquid state, boil with the addition of salt, sugar and citric acid.
- Pour hot tomato juice over a jar of peppers to hide the vegetables.
The fill should be as hot as possible. The filled cans are sterilized for another 15 minutes, and then rolled up under the lids.
Recipe 3
The simplest in terms of the number of ingredients, but the longest in time. For this recipe you will need:
- bell pepper (any colors) - 1 kg;
- tomatoes - 4 kg;
- sugar - 2 tbsp. l .;
- salt - 1 tbsp.
How to cook:
- Cut the tomatoes, remove the centers, put in a saucepan and simmer for half an hour.
- Strain the stewed tomatoes through a colander so that only pure juice remains, without seeds and peels.
- Pour the resulting juice into a saucepan and cook for another 2.5 hours over low heat: as a result, 3 liters of juice will make about 1 liter of concentrate.
- Prepare the peppers, cut them lengthwise into 5-6 pieces.
- Put pepper in hot juice, salt and sugar. Boil until the pepper becomes soft, about half an hour.
- Put lecho in prepared dry jars, roll up.
For this recipe, it is important that the tomatoes are very ripe, even overripe, but without signs of rotting. You can take any peppers - multi-colored jars look beautiful and festive.
