Let's make a delicious egg roll with mushrooms and potatoes. Such a roll will be an excellent appetizer to the table or a full breakfast, which is very easy to prepare.
Required Ingredients:
· Any mushrooms 200 grams (we use oyster mushrooms);
· About 200 grams of potatoes (1 medium potato);
2 chicken eggs;
1 small onion
· Seasoning and herbs optional.

1. Cut the onion into half rings. Chop the mushrooms finely.
2. Fry mushrooms and onions over high heat, salt to taste.
3. Rub the potatoes on a coarse grater and send them to the pan. Mix everything well until a homogeneous mass is obtained. Simmer over medium heat, covered, until tender.
After the filling is ready, move on to the eggs.
4. Break 2 eggs into a bowl, mix the egg white with the yolk, whisk slightly with a fork and add some salt. Pour half of the eggs into the pan and fry like pancakes over low heat.
5. As soon as the egg pancake is ready, put the filling of potatoes and mushrooms on it, and wrap it in a roll. We do the same with the second pancake.
Sprinkle with herbs and serve.
It is better to serve such a roll cooled, then it tastes better.
