How to choose the right roots - what you need to pay attention to first

In order for products to be preserved for a long time, it is necessary to approach their parameters responsibly. To prepare delicious seasonings, it is necessary to choose even roots and always have a solid structure, with no signs of damage. The surface of the horseradish should be lightened, without dark spots, and the place of the cut should be a rich snow-white color.

But with the right choice of the right horseradish, you need to pay special attention to some important nuances. For example, the optimal culture age should be at least three years. During this time, horseradish will become quite spicy, but with all this, it will not lose its taste. The ripe root of the required maturity must reach a thickness of at least 20 mm.

In order not to disturb the quality of the workpiece, it is necessary to pay special attention to the method of its preservation. Horseradish roots are not advised to be stored together with other products. In no case should they be wetted with water, dropped, or exposed for a long time in the air.

Optimal storage method

The best option for storing ripe horseradish is the basement. In such conditions, the roots will not lose their freshness for a long time. The hostesses who will like this method the most, first of all, need to complete all the necessary preparations. First you need to get a box with a reliable sealed bottom and walls. Also create a favorable base for optimal storage of horseradish roots in the basement. To do this, use the coarse river sand. Then clean the horseradish from the rest of the soil. Cover the bottom of the box with sand with a layer of about 8 cm and lay the roots in rows. Finally, sprinkle the stacked horseradish with a second layer of sand, which should rise about 4 cm above the roots.

Horseradish roots should not touch each other, however, the interval between vegetables should be no more than 3-5 cm.

Also, products can be stored on an insulated loggia.

Storing horseradish at home

Sometimes the situation changes, and the roots have to be preserved in apartment conditions due to the lack of suitable premises. In such cases, there are two ways: storing the vegetable in refrigerators or in a dried state.

The first method has a shorter storage period - in the refrigerator, in the freezer, up to about five months, in the refrigerator itself, up to 21 days. At the same time, the second option differs in a simple way of harvesting, however, such horseradish is not suitable for making ordinary Russian seasoning. And the dried roots are excellently used for preparing the first and second courses and are used to add to salting.
