Zucchini salad "Tatar song"

The salad will become a hit with everyone who adores Tatar cuisine. If there are no zucchini in the house or no one eats them, feel free to change them for eggplants and get an equally interesting version of this blank. Take the following products for Tatar Song:

  • 1 kilogram of zucchini;
  • 100 grams of a kilogram of carrots, onions, green apples, bell peppers;
  • 30 grams of hot pepper and garlic;
  • 2 tablespoons of tomato paste;
  • 7 tablespoons of vegetable oil;
  • 4 tablespoons of vinegar 9%;
  • a teaspoon with a slide of salt;
  • 100 grams of sugar.

Cooking method:

Step 1. Zucchini is washed and cut into small cubes.

Step 2. The rest of the vegetables are removed from seeds and skins and sent to a meat grinder.

Step 3. Spices and tomato are added to the resulting puree. paste and mix well, then pour in the oil and stir the mass again. The salad is stewed after boiling for a third of an hour. Then pepper and garlic are sent there and boiled for another 10 minutes.

Step 4. Add zucchini to the mass and heat everything together for another 10 minutes.

Step 5. The prepared mass is laid out in prepared glass jars, then rolled up, the containers are turned over onto the lid and insulated until they cool.

Vegetable salad with rice

For 1 kilogram of tomatoes, take the following amount of ingredients:

  • 200 grams of carrots, onions and bulgarian peppers;
  • 100 grams of rice;
  • 100 milliliters of vegetable oil;
  • a tablespoon of 9% vinegar;
  • 50-75 milliliters of water;
  • 25 grams of salt and sugar;
  • bay leaf and pepper to taste.

Cooking method:

Step 1. Rice is washed, poured with water and brought to readiness.

Step 2. Peel the tomatoes. Cut the fruits into slices.

Step 3. Chop vegetables: grated carrots, pepper and onion cut into half rings.

Step 4. Oil is poured into the container in which the salad will be prepared and the onions are sautéed for about 5 minutes, without bringing to a strong fry, the carrots and bell peppers are poured and stewed for about 7 minutes. Put rice in vegetables, add tomatoes and simmer the mixture under a lid for about half an hour. If there is not enough liquid, you can add water. Add sugar, salt and spices, heat the mass for another 5 minutes and then pour in vinegar and mix.

Step 5. Immediately put the prepared salad in sterilized jars, roll up and wrap until it cools.

Vegetable salad with beans

For 1 kilogram of tomatoes you will need:

  • 0.5 kilograms of beans, carrots, onions and bell peppers;
  • 250 milliliters of refined vegetable oil;
  • 2 tablespoons of sugar, 2 teaspoons of salt, 50 ml of 9% vinegar.

Cooking method:

Step 1. The beans are washed and boiled until tender.

Step 2. Vegetables, except tomatoes, are chopped.

Step 3. Tomatoes are cut into slices, stewed for about 3 minutes and rubbed through a sieve.

Step 4. In a saucepan, heat the oil and fry the onions and carrots, then add pepper to the frying and stew all together for 5 minutes.

Step 5. Beans, tomato puree are added to the vegetable mass and stew for about 40 minutes.

Step 6. Pour spices and vinegar and cook for another 5 minutes.

Step 7. The finished salad is distributed in containers, rolled up, turned upside down and wrapped.
