Choosing vegetables and preparing for salting

To get great results, it is important to choose only fresh vegetables without signs of damage. If you plan to preserve whole vegetables, you should choose small specimens that practically do not differ in size.

It is good if the peppers are of different colors, so the curls will acquire an attractive colorful appearance.

Selected vegetables should be washed thoroughly, cut off the tails and soaked vegetables for several hours in cold clean water.

For now, you can forget about vegetables and start preparing glass containers. The containers are thoroughly washed and sent for sterilization.

The classic recipe for cucumbers with peppers

To prepare pickles for a one liter jar you will need:

  • 10 pieces of small cucumbers;
  • 2 pieces of bell pepper;
  • 2 garlic cloves;
  • 2 pieces of laurel leaves;
  • peas of black and allspice to taste;
  • dill greens;
  • litere of water;
  • one and a half tablespoons of ordinary salt;
  • 2 tablespoons of granulated sugar;
  • 1 teaspoon 70% acetic acid.

Cooking technology:

  • Vegetables and glass containers are carefully prepared.
  • Greens, garlic cloves, peppercorns and laurel leaves are laid out at the bottom of the cans.
  • Cucumbers are packed tightly.
  • The pepper, cut into slices, is placed on the sides of the jar in the intervals between the cucumbers. So the pickle will turn out to be very beautiful.
  • Boiling water is poured into jars and left in this position for a quarter of an hour.
  • Next, they are engaged in the preparation of the brine, which must be brought to a boil.
  • As soon as the water in the cans has cooled, it can be drained and replaced with ready-made brine. In this position, the workpieces are left for half an hour.
  • The liquid is drained a second time, boiled again, poured into jars and finally closed. First, pour one teaspoon of vinegar essence.
  • The jars are turned upside down, wrapped in a warm cloth and allowed to cool.

Winter salad with cucumbers and peppers

Preparing a delicious and beautiful treat for the winter is quite simple. Pickles look best in half-liter jars.

Required ingredients for one jar:

  • a teaspoon of ordinary table salt;
  • half a teaspoon of granulated sugar;
  • two teaspoons of vinegar to choose from: it can be ordinary table, apple or wine;
  • a tablespoon of vegetable oil.

Cooking technology:

The whole essence of a beautiful dish is layered cooking. For procurement, you will need to perform the following steps in stages:

  • Onion rings are laid out at the bottom of the cans.
  • Next, lay out the stripes of bell pepper.
  • Cucumbers are laid out in the third layer. They must first be cut into cubes.
  • The last layer is arranged from beautifully chopped tomatoes, garlic cloves and decorated with herbs.

After all the vegetables take their places, they are poured with boiling water and sent for sterilization. This requires a large pot filled with water. Banks with blanks are placed in a pan, having previously spread a layer of fabric. Sterilize enough within ten minutes from the moment the water boils.

After that, the jars are closed, turned upside down, wrapped in a warm cloth and sent to cool.

Tips for successful conservation

In order for the vegetable preparations to be tasty and healthy, it is important to adhere to some rules:

  • If vegetables from your own garden are used for harvesting, it is better to harvest in the morning.
  • To get rid of possible bitterness, vegetables are pre-soaked in water for several hours.
  • Before preservation, you need to carefully prepare containers and lids. Make sure the containers are free of chips or other damage.
