Plum adjika - the history of the emergence of sauce

The vast majority of recipes for dressings for dishes came to us from Caucasian and Asian cuisines. A special place among them is occupied by adjika - a piquant sauce that has long won the love of different peoples of our country. Initially, it took people little time to prepare this seasoning - the first adjika that appeared did not include any additional ingredients, except for grated pepper and salt. Later, culinary experts began to create new variations of this sauce, mixing between tomatoes, herbs, garlic and hot chili peppers. Nowadays plum adjika is especially popular, simple recipes for which are presented below.

Unusual plum adjika Hungarian ordinary

Almost everyone will like the recipe for the first sauce - it cooks quickly enough. Vinegar is not added to this adjika at all, but it contains all the necessary spices that give the dishes a unique taste and aroma. To prepare it you will need:

  • plum variety Vengerka;
  • sweet and hot peppers;
  • onion;
  • garlic;
  • coriander;
  • thyme;
  • hops - suneli;
  • sugar;
  • salt.

First, you will need to completely separate the plum pulp from the seeds and chop it in a blender. Then, peel the onion, sweet and hot peppers and thoroughly grind them together to a state of porridge. Mix the resulting mass with the pulp of the plum, and then pour it with tomato juice. Next, the mixture must be cooked over an open fire for 10 minutes. After cooling, the adjika should be spread over steam-treated jars and stored in a cool basement or refrigerator before eating.

Seasoning for cherry plum or wild plum dishes

The second sauce has a more sour taste, as it is usually customary to make it from cherry plum or wild plums. The recipe contains the following ingredients:

  • common cherry plum - 1 kg;
  • hot pepper (1 pod);
  • garlic (2 heads);
  • saffron - 1 tsp l .;
  • coriander - 1 tsp l .;
  • salt - 2 tsp l .;
  • sugar - 3 tsp l.

To prepare such adzhika, you will need to boil a kilogram of fruit, and then carefully separate their pulp from the seeds. During the cooking of cherry plum, it is necessary to finely chop the pepper and garlic, simultaneously adding sugar, salt and all the spices presented in the recipe to them. After that, the resulting garlic-pepper mixture must be mixed with the plum pulp in a blender. Subsequently, the mass must be diluted with hot water and boiled for 15 minutes so that it acquires a mushy consistency. As a result, the cooled adjika is poured into sterilized jars, which can then be stored in a cool room.
