Root crops that are not afraid of frost

Such frost-resistant crops include biennial and perennial varieties of vegetables. They can easily endure winter in soil. Therefore, they are either removed from the fields and gardens in the very last turn, or they are left in the ground until the next sowing season. These representatives of the plant world do not require careful care, they rarely get sick and are practically not afraid of pests.

Jerusalem artichoke. This vegetable is still not so often found on the plots of summer residents, although it has a lot of advantages. Earthen pear contains many substances useful for the body. This vegetable is stored very poorly after harvest. In contact with air, it quickly grows moldy. But nothing happens in the soil with Jerusalem artichoke during the winter. The only condition for the good condition of the root crop is a high level of snow cover. If the winter has little snow, the garden bed must be covered with a layer of straw at least 5 cm thick.

Carrot. It is customary to remove this beloved vegetable, but if for some reason this did not happen, you do not have to worry about the safety of the plant in the ground, it is enough to cover the garden with a protective layer of spruce legs. At the same time, no tops should remain above the ground; they are pre-cut off. Straw and fallen leaves are laid on the spruce branches. From above, all layers are covered with a film. If the temperature is very low, it is advisable to additionally fill the bed with a lot of snow. Leaving carrots in the ground for the winter, it should be borne in mind that by the spring it will certainly grow small roots, and the amount of water in it will decrease. It will be undesirable to consume it fresh, although such root vegetables are perfect for heat treatment: frying, boiling, stewing.

Scorzonera. This is an even rarer vegetable in our latitudes. Straw is also required for its preservation. If the roots are not taken out of the ground at all, then you can see how the sprouts turn green, then they bloom and give seeds.

Parsnip. This vegetable does not even need to be covered in not very cold winters. The only condition is that the bed should be hilled. There should be a small mound on the surface.

Two more representatives of the plant world - daikon and turnips - tolerate the cold period well in the soil. But keeping them safe is a little more difficult than other vegetables. In this case, you will have to install wooden sides. Boards are immersed in the soil along the border of the beds to a depth of 10-15 cm on both sides. By this time, the tops should be cut off, and from above the space between the sides is filled with river sand with a layer of up to 10 cm.

Frost-resistant greens

Parsley. This plant also stays well in the soil throughout the winter. But the garden bed in the fall should be spud or mulched with a layer of humus up to 10 cm high. However, it is not recommended to grow greens from overwintered roots. it becomes coarser and a lot of nutrients go to flowers.

Celery. Also tolerates cold well. In autumn, in preparation for wintering, the tops are completely cut off and hilling is performed. A layer of spruce branches is laid on top.

Chard. Another rare plant in our country. When stored in the soil in winter, these greens require additional shelter with a layer of peat or sawdust; in extreme cases, fallen leaves are suitable.

Group of perennial vegetables

Such plants include the well-known sorrel, horseradish, rhubarb, lovage and all types of onions. It is not customary to clean them for the winter. For several years, herbs used as spices overwinter.

These include mint, lemon balm, oregano, catnip and tarragon. In the first year, these herbs are not harvested at all. This time is given to the plant so that it takes root in the soil and gives the first foliage. Harvesting is possible only from the second year.
