Salted cherry in jars
An uncomplicated recipe allows you to get salted cherry tomatoes with an amazingly pleasant taste.
Ingredients:
- cherry tomatoes (preferably multi-colored fruits) - 2 kg;
- large garlic head;
- medium-ground table salt - 100 g;
- celery and cilantro - small bunches;
- large bay leaves - 2 pcs.;
- peppercorns - take to taste;
- filtered water - 1.5 liters.
Cooking algorithm:
- In an enamel bowl, bring water to a boil.
- Then salt is poured into it, peppercorns and peeled garlic cloves are added.
- When all the grains of salt dissolve, the container is removed from the stove. Leave to cool.
- Put the tomatoes in boiling light-salted water and blanch for a minute. Take out the fruits with a slotted spoon and spread them on a linen or cotton towel for 20-25 minutes.
- Bay leaves and celery are placed at the bottom of sterile jars.
- Then put the tomatoes, pour in the brine, put the cilantro on top.
Cover with a plate. Tomatoes are kept under load for a week under room conditions, after which they are ready for consumption.
Hot pickled cherry
They choose medium-sized cherry tomatoes with a strong, whole skin.
Ingredients:
- tomatoes - 2 kg;
- large onion;
- dill umbrellas - 2-3 pcs.;
- garlic cloves - 2 pcs.;
- young horseradish leaves - 1-3 pcs.;
- peppercorns, celery and parsley - to taste;
- bay leaves - 2 pcs.;
- granulated sugar with table salt - 2 tbsp. l .;
- filtered water - 1.5-2 liters;
- table vinegar (6%) - 3 tbsp. l .;
- clove buds - 2 pcs.
Preparation:
- All greens must be rinsed and excess moisture shaken off.
- The washed tomatoes are pierced in the area of the stalk with a toothpick or needle.
- Put some herbs and spices in jars (except cloves).
- Then the tomatoes are laid out. The remaining herbs with spices are distributed over the top.
- Bring water to a boil and pour in the tomatoes.
- After a quarter of an hour, the liquid must be drained into an enamel bowl, dissolve salt and sugar in it. After boiling, add vinegar, cloves and immediately pour the jars to the neck.
Roll up the containers and, turning them over on the lid, wrap them with a warm blanket. Such tomatoes are ready in a day.
Quick salting cherry tomatoes
To get spicy salted tomatoes in a few days, you can use a quick pickling recipe.
Ingredients:
- cherry tomatoes - 3 kg;
- basil greens - 300 g;
- large garlic head;
- peppercorns - 5-6 pieces;
- table salt of medium grinding and granulated sugar - 2 tbsp. l .;
- filtered water - 1 l;
- table vinegar (6%) - 6 tbsp. l.
Cooking algorithm:
- The water is brought to a boil in an enamel bowl.
- Dissolve sugar and salt in it, add half of the chopped basil greens, peppercorns, vinegar.
- After stirring, bring the water to a boil.
- Basil, laurel, garlic chopped into small slices and tomatoes are placed in sterile jars.
Pour vegetables with boiling marinade, seal and keep in a dark place for 24 hours. After 3 days, the salting is ready for use.
