What is good about freezing?
Plums collected from the tree begin to deteriorate after two days. It is not always possible to preserve the entire crop at such times. Freezing does not take much time, and then you can cook the same from the thawed fruits as from fresh ones.
Pros of freezing:
- All vitamins, macro- and microelements useful for health are preserved as much as possible (frozen plums lose only 20%, and when making jam - from 40 to 50%).
- Compactness of storage, the ability to freeze any portions (even the smallest).
- Doesn't require a lot of time and effort.
- Thawed fruits can be used in the same way as fresh ones.
For freezing, it is better to choose already ripe (but not overripe), clean and elastic fruits without damage or dents. The ideal choice would be the Hungarian variety - it has a fleshy and juicy pulp with a dense texture.
Freezing plums for the winter
- With a bone. Wash the fruit and pat dry on an absorbent towel. Then place them on a tray (preferably a wooden one) and refrigerate. A few hours later, pour the chilled plums into cloth bags and place in the freezer.
- With powdered sugar. For 1 kilogram of ripe plums, you will need 200 grams of powdered sugar. Wash the fruits, cut into halves, remove the seeds and place on a tray in 1 layer. Place the tray in the refrigerator for a few hours, then remove, sprinkle the plums with powdered sugar, pack in bags and put in the freezer.
- In sweet syrup. Prepare the syrup: for 1 liter of water, take 700 grams of sugar and a spoonful of lemon juice. Mix in a saucepan and bring to a boil. Remove pits from washed plums. Fill the fruits with the already cooled syrup and refrigerate for several days, after which, spread them in portions and freeze.
Important nuances:
- First, rinse and dry your freezer thoroughly. Remove the ice from the old equipment (for this you will have to arrange defrosting) - this is very important, because from excessive freezing, plums will lose all their useful properties.
- Plums can be stored in the freezer for up to six months, and at -18 ° C for up to 9 months.
- It is worth noting the date of freezing on the packaging to avoid delays.
