With the onset of summer, we are looking forward to fresh vegetables: cucumbers, tomatoes, carrots, peppers and, of course, young, crispy, juicy cabbage! You can make borscht from it, stew it, but the most delicious is fresh salad with dill, salt, oil. Cabbage salad can also be enjoyed in winter by opening a jar with a fragrant twist. Especially good is a salad of fresh cabbage with cucumbers and onions, because during processing the vegetables do not lose their taste and characteristic crunch.

Necessary components

For the salad you will need:

  • Fresh young cabbage - 1.5 kg.
  • Freshly picked cucumbers in the garden - 1.5 kg.
  • Onion heads - 500 g.
  • Green onions - one bunch.
  • Garlic - 1 head.
  • Bay leaves - 8 pieces.
  • 9% table vinegar - 5 tbsp. spoons.
  • Table salt - 2 tbsp. spoons.
  • Sugar - 1 tbsp. the spoon.
  • Vegetable deodorized oil - 1/2 cup.

Cooking steps

  • Wash cabbage, remove the top spoiled leaves, chop with a knife or rub on a special grater.
  • My cucumbers, cut off the ends, cut into rather thin circles.
  • We peel the onions, wash them and cut them into small pieces. Also wash the green onion feathers and chop finely.
  • Take a bowl or saucepan of a suitable size, put chopped vegetables in it, add oil, vinegar, salt, sugar, bay leaf. Clean the garlic, chop finely or squeeze through the garlic press and add to the pan. We mix everything. Cover the bowl with cling film and leave to infuse for several hours so that the vegetables are well marinated.
  • After a couple of hours, mix the salad well again and put it in pre-sterilized jars. We cover the top with iron lids, but do not roll it up.
  • We take a wide, voluminous pan, put a cloth or towel on the bottom (so that the jars do not crack) and put it on the stove.
  • We place our blanks in a saucepan so that they do not touch each other, pour water over the hangers of the cans, bring to a boil and sterilize the salad for 20 minutes.
  • Then we take out the jars, roll up the cabbage salad with cucumber lids and turn them over. We cover the jars with a blanket, let them cool completely (it is better to leave them overnight). We put the salad in the basement or refrigerator.

This is a classic cabbage and cucumber salad recipe. You can interpret it in your own way by adding carrots, tomatoes, bell peppers. It all depends on the imagination and desires of the hostess.

Cabbage salad can be used as a side dish for meat dishes, as an appetizer at a feast. This salad is liked by both adults and children, because everyone wants to crunch vegetables in winter, imagining that it is a warm summer!
