The first step is just the right root vegetables

  • Beet freezing should be started with careful selection of root crops. It is better to choose vegetables that are not old, juicy, of medium size, beautiful dark red color. There should be no damage on the beets, you cannot take rotten vegetables with mold, all this can not only spoil their taste, but also be dangerous to health. Late-ripening beets are best suited for freezing, since they have a simply gorgeous taste and perfectly tolerate low temperatures.
  • Then the vegetable must be cut with a knife on both sides.

  • The next step is to wash the workpiece well and clean it with a brush from soil and other dirt.
  • Now you need to remove the peel, try to cut it very thinly. A potato peeler is best suited for this. Pay attention to the absence of bristles on the surface of the beets, its presence indicates the rigidity of the vegetable.

The second step - we are considering different options for freezing

You can freeze beets raw and boiled, whole or in pieces, grated or mashed. It all depends on the dishes that you plan to cook from the vegetable. Consider the most convenient and popular freezing methods:

  • Raw. Whole vegetables are tasty and do not lose their shape. Each root vegetable is placed in a separate bag or container. Beets must be thawed at room temperature before eating. You can make a salad or vinaigrette from such beets. To add beets to borscht, it is best to chop - cut with a knife or grate. Then the workpiece is placed in containers or bags, it is most convenient to immediately divide it in portions, and place it in the freezer. Still, freezing raw beets is not the best option.
  • Frozen boiled beets are easier to eat in winter. The preparation for freezing whole vegetables is simple - they need to be washed well, boiled and cooled. Then put in individual bags and place in the chamber. Chopping the beets in advance will make the cooking procedure much easier and you will save cooking time. Chopped root vegetables can be added directly to the dish after removing from the freezer, especially if the vegetables are placed in portioned bags beforehand. Before freezing, boiled beets can be cut into cubes, sticks, strips, and grated. The option depends on preference. The workpiece is laid out in portions into containers and put into the freezer. Instead of boiling, you can bake whole beets in the oven. The baked vegetable needs to be cooled and peeled, you can freeze the whole beets, or you can chop it in any way and store in the freezer all winter.
As you can see, freezing beets for the winter is as easy as shelling pears, but this procedure will significantly save cooking time, which the hostess can spend not in the kitchen, but to devote to her family.
