Preparation of berries
Raspberries are recommended to be picked on a warm, sunny day. In such weather, the berry is filled with great taste and aroma.
The harvested crop should be sorted out, spoiled berries, leaves, blades of grass, bugs should be removed. To be sure that there are no larvae in the raspberries, they should be immersed in salted water for 20 minutes (20 g of salt per 1 liter of water). Then rinse thoroughly under running water and leave in a colander to completely drain the water.
If you are absolutely sure of the health of the berries and have carefully sorted them out, then it is possible to harvest it without washing. Usually, raspberries are prepared for freezing.
It is worth remembering that the harvested crop deteriorates quickly, and therefore it should be processed within 3 days.
Whole raspberries with sugar
After you have sorted out and washed the berries, they should be dried well so that not a drop of moisture remains on the surface. At this time, we sterilize the cans washed with soda in any way: over steam, in the microwave, in the oven.
Next, lay the raspberries into jars in an even layer, sprinkling each layer with sugar. You need to shake the jar a little so that the sugar fills all the voids and evenly envelops the berry.
Pasteurize the filled jars in a saucepan with hot water, spreading a napkin under them. Capacity 0.5 l - 20 minutes, 1 l - 25 minutes. Then we twist and store in the refrigerator.
Crushed raspberries with sugar
The preparation of raspberries is the same as in the previous recipe. Next, we shift the berry into a wide container and fill it with granulated sugar at the rate of 1 kg of berries per 1 kg of sugar. Stir the sweet material and leave in a cool place for a couple of hours until the juice appears. After that, using a wooden crush, grind the mass. You can also use a blender for these purposes. The only drawback is that the metal parts of the technique can cause premature souring of the product.
We put the mass in sterilized jars and pour a thin layer of sugar on top. Store in a cool place.
Raspberry syrup
This preparation method is similar to the previous one, but a little more complicated. The mass is ground in the proportion - 200 g of granulated sugar per 1 kg of raspberries. After the sugar is completely dissolved, the mixture should be refrigerated for 2 hours to form a large amount of juice.
Put cheesecloth in a large bowl, folded several times, so that its edges hang down. We shift the raspberries onto it, raise the edges and tie them to make a bag. Squeezing gently, squeeze the sweet juice into the pan. Next, it should be boiled, poured into sterile jars and rolled up.
From the remaining sweet cake, you can cook a delicious compote or use it as a raw material for liqueur.
Jam "Pyatiminutka"
1 kg of berries will require 1.5 kg of sugar. Cover the prepared raspberries with sugar, mix and leave until the juice appears.
We put the mass on fire and heat until the granulated sugar is completely dissolved. Immediately after that, pour the jam into sterilized jars to the very top and close them with hot plastic lids, you need to create a vacuum in the jar. Store the jam in the refrigerator.
