How to make a marinade

Vegetables are placed in cool water for 1-2 hours. A glass jar is filled with herbs, garlic and other spices. Cucumbers are tightly packed, pepper, herbs, garlic are placed on top. Then a marinade is prepared, with which vegetables are poured. Water is removed, re-pouring, vinegar is added. The containers are rolled up with tin lids.
For the following recipe, you will need 3 cans of 1 L each:
- cucumbers (1.8 kg);
- dill (2 branches);
- horseradish leaves (1-2 pcs.);
- garlic (3-4 cloves);
- granulated sugar (6 tsp. l.);
- black pepper (6-7 peas);
- currant leaves (2 pcs.);
- salt (3 tsp. l.);
- table vinegar (5 tbsp. l.).
The vegetables are rinsed. Spices, herbs and other ingredients are placed at the bottom of glass jars. Then spread the vegetables tightly, add seasonings and fill with water. In a water bath over low heat, the marinade is brought to a boil. After 2-3 minutes, the containers are rolled up.
Recipe options
To prepare spicy pickled cucumbers, you will need the following products per 1 liter:
- parsley (2-3 branches);
- small cucumbers;
- laurel and cherry leaves (2 pcs.);
- garlic (2 cloves);
- granulated sugar (60 g);
- sweet and bitter peppers;
- horseradish leaves;
- tarragon;
- dill;
- salt (40 g);
- vinegar 9% (70 ml).
Compact cucumbers are washed, filled with cool water, and left for 3 hours. Greens, spices and other ingredients are laid out at the bottom of glass jars. The containers are filled with heated water and left for 20 minutes. The procedure must be repeated. Then the marinade is prepared, the jars are poured and rolled up.
The following marinade recipe requires:
- cucumbers (1 kg);
- garlic (2-3 cloves);
- dill seeds (2 tbsp. l.);
- bay leaf (1-2 pcs.);
- chopped onion (1 tbsp. l.);
- grated horseradish (1 tsp. l.);
- salt (100 g);
- water (1 l);
- granulated sugar (1 tbsp. l.);
- black peppercorns (2-3 pcs.);
- citric acid (1 tbsp. l.).
Vegetables and greens are washed with running water. Greens, spices, then cucumbers are placed in jars. The marinade is prepared in a saucepan, the jars filled with ingredients are poured with the composition. The containers need to be sterilized for 15-20 minutes and rolled up.
