Harvesting berries without heat treatment
Recipe 1
We will need:
- Currant - 1 kg,
- sugar - 1.8-2 kg.
- We clean the currants, rinse them thoroughly under cold water and transfer to a colander.
- Put in a bowl, sprinkle with half the amount of granulated sugar and grind. Gradually add the rest of the sugar.
- We distribute the currants in boiled containers, add sugar and roll up.
Recipe 2
To prepare jelly without heat treatment, grind the berries with a blender, then mix with granulated sugar in a ratio of 1: 1. Keep the jelly in the refrigerator for 3 hours, then beat with a blender. We distribute in sterile containers.
Recipe 3
Currant preparation by pickling.
It is necessary:
- 1 kg of currants;
- 1 kg of sugar;
- 100 g table vinegar (9%);
- half a liter of water;
- cloves, cinnamon, allspice.
- Pour 5 pieces of cloves, cinnamon and allspice into sterile liter containers, then put the berries on the hangers of the jars.
- In a separate bowl, boil vinegar and water.
- Pour the resulting marinade into a container with currants and roll up with boiled lids.
- We put containers upside down, cover with a blanket, leave for a day.
Berry compote and fruit drink
For making compote (for a 3-liter jar) we need:
- 1 kg of fruit;
- 300 g sugar;
- vanillin.
- Pour fruits up to half the volume into a sterile container.
- Fill with boiling water, cover with a lid.
- After half an hour, pour the entire contents of the jar into a saucepan, add sugar, boil for 5 minutes.
- Put 1/3 packet of vanillin in a jar, fill with compote and roll up.
- We cover with a blanket for a day.
For fruit drink it is necessary:
- 0.5 kg of fruits;
- 50 g granulated sugar;
- 500 g of water.
- Rub the berries through a colander with a wooden spoon.
- Set aside the resulting juice, pour the resulting cake with syrup from water and sugar, boil for 5 minutes.
- We filter the compote, cool it, pour it into fresh juice.
- We bottle it.
Berry in its own juice and in the form of sauce
- Put thoroughly washed and peeled fruits in an enamel container.
- Heat over low heat until juice forms.
- Put the hot fruits in boiled jars with lids.
- We sterilize containers for 20 minutes.
- Roll up, cover with a blanket for 24 hours.
Currant jam
For making jam we take:
- 1 kg of currants,
- 1.2 kg of sugar;
- one and a half glasses of water.
- Cook sugar and water syrup in an enamel container.
- Put the berries in syrup and cook for 5 minutes.
- We distribute the jam on sterile jars, roll it up.
For jam we take:
- 1 kg of fruit;
- one and a half kg of granulated sugar;
- 0.4 l of water.
- Boil water in a large saucepan.
- Blanch the berries in a colander in it.
- We put hot fruits in an enamel container, pouring sugar and pouring 0.4 liters of water.
- Boil, stirring occasionally, until the volume is halved.
- Pour the jam into containers with lids and sterilize for 15 minutes.
- We close the containers.
For jelly We need:
- 1 kg of fruit;
- 1 kg of granulated sugar;
- half a liter of water.
- Pour berries into an enamel container with cold water, boil until the berries release juice.
- As soon as the juice boils, remove from heat, pass through a sieve.
- We grind the fruits through a sieve, separate the cake, re-filter the juice through a colander.
- Add granulated sugar, boil for half an hour.
- We distribute to containers.
- We pour 1 tbsp. a spoonful of granulated sugar, close the jars.
We keep all the blanks in the refrigerator or in the storage room.
