Red cherry plum (plum)
It is important to use quality fruits without traces of damage and dryness. Fresh fruits are sorted immediately after harvest. For the sauce, you need ripe, but firm fruits.
Ingredients:
- red plum fruits - 1 kg;
- filtered water - 300 ml;
- dried dill - 3 tbsp. l .;
- medium head of garlic;
- ground red pepper - 2 tsp l .;
- fine fraction salt - 25-30 g;
- coriander - 3 tsp l .;
- dried crushed mint - 2 tbsp. l.
Preparation:
- The fruits are washed, dried with a paper towel.
- Cut the plums into halves, removing the seeds from them.
- Transfer the raw materials into an enamel pan and pour in water.
- Boil on minimal heat until the skin begins to burst and separate on the plums.
- Remove the pan and carefully pour the liquid into a separate bowl.
- Fruits are ground to a state of puree, transferred to an enamel container.
- Pour in the liquid, which was drained from the fruit. Put garlic mashed in a press and spices, grated in a mortar.
After a five-minute boil, the tkemali are placed in small sterile jars and rolled up.
From yellow plum
It is easy to prepare tkemali with a sunny tint, which is given by yellow plum fruits. They should be soft enough with a smooth skin without any signs of rot or damage.
Ingredients:
- yellow plum fruits - 1 kg;
- hot pepper pod;
- medium head of garlic;
- fine sugar sand - 50 g;
- dried crushed dill - 50 g;
- finely chopped cilantro - 40 g;
- fine fraction salt - 30 g;
- coriander - 1 tsp l.
Preparation:
- The washed fruits are carefully wiped off with a linen or paper napkin.
- The fruits are cut, freeing them from seeds, and then passed through a meat grinder.
- The resulting mass is laid out in an enamel bowl, sugar and salt are added and boiled at a low temperature for 5-6 minutes.
- Add mashed garlic, herbs and spices.
Stir the finished sauce, immediately transfer to jars and roll up.
Tkemali quick sauce
There are many ways to prepare incomparable tkemali. The following recipe attracts not only by the possibility of obtaining a fragrant sauce with a spicy taste, but also by the fact that it does not require much time during cooking.
Ingredients:
- high quality plum fruits - 1 kg;
- filtered water - 200 ml;
- vegetable oil - 40 ml;
- red hot pepper - 5 small pods;
- crushed garlic - 0.5 cups;
- a bunch of fresh cilantro;
- fried cilantro - 3 tbsp. l .;
- salt to taste.
Preparation:
- Washed high-quality fruits are placed in an enamel pot with water and boiled at medium boil until softened.
- Rub them through a sieve, removing skins and bones.
- The pulp is boiled in an enamel bowl for 7-8 minutes with the addition of chopped herbs and pepper with constant stirring.
- Salt the sauce to taste, add the rest of the ingredients.
The tkemali are actively mixed and immediately rolled into small jars.
Tkemali is stored in a cellar or refrigerator. This sauce, when made according to any recipe, turns out to be thick with a surprisingly pleasant rich flavor bouquet. It serves as an excellent addition to fish and meat.
