And after getting married, I now often prepare this product for my spouse, who eats sprat with great pleasure, putting it on a piece of bread. How to prepare a sprat in tomato sauce for the winter
This wonderful snack does not require any special skills from you when making it for the winter. Sprat, made in a sauce of tomatoes seasoned with vegetables, turns out to be simply incomparable. You can also add various spices to this dish to taste.
- Required products: - frozen sprat - 2.5 kg, - ripe tomatoes - 3 kg, - carrots - 1 kg, - tomato paste - 500 ml, - onions - 1 kg, - sunflower oil - 200 ml, - fine salt - 100 g, - granulated sugar (preferably from beets) - 300 g, - vinegar - 2 tbsp
Cooking steps:
- We take fresh frozen fish. Better buy frozen sprat, this fish will be much tastier. Defrost it at room temperature (natural defrost) and rinse thoroughly under the tap.
- Next, for small kilka we cut off the heads and tails, and for large ones we clean everything inside. We wash the resulting bodies again with water and put them in boiling water for a minute. After such heat treatment (in cooking it is called blanching), the unpleasant smell will disappear, and the sprat will become very soft.
- We take tomatoes (use ripe ones better), we also rinse them and scroll them in a meat grinder.
- Wash, peel the carrots and rub on a coarse grater. We clean the onion heads, also wash it and cut it using fine chopping.
- Pour tomato juice into a saucepan, lay grated carrots and shredded onions and simmer everything over low heat for about 40-50 minutes.
- After that we pour in vegetable oil, add tomato paste and put all the salt and sugar. Thoroughly mix the resulting sauce and put all the heated fish in it.
- Then we simmer the sprat in this sauce for half an hour. Do not forget to stir the dish. Pour vinegar 5 minutes before the end of the process.
- At the end of cooking, put the sprat stewed with vegetables into steamed jars and tighten them with lids. As soon as fresh canned food has cooled down, we immediately put it away for storage in a pantry or in another suitable place.
A sprat prepared in this way will retain its shape for a long time, will be very tender and juicy and will deliciously feed you on cold winter evenings.
