Aromatic compote for the winter from prunes
A refreshing compote with a wonderful rich color is prepared quickly, but the result is obtained with wonderful taste. It is important to select the right raw material when purchasing. Fruits should be ripe and firm with the skin evenly colored in the dark blue hue typical of prunes. The surface should be free of dents, damage, signs of decay or mold.
Ingredients:
- fresh prunes - 0.8 kg;
- medium fraction granulated sugar - 2 cups;
- filtered water - 2 liters.
You must first prepare glass jars, which are washed with soda, rinsed thoroughly and sterilized for 3-4 minutes over steam. You can gently scald them with boiling water. Then the containers are turned over onto a thick linen napkin or linen towel. Dry their surfaces.
Glass dishes that are damp after washing in the oven are also sterilized. Banks are placed upside down on the wire rack so that they do not touch the walls and each other. Only after that, the heating is turned on by setting the temperature indicator to 180 degrees. After 35-40 minutes, the oven is turned off and the jars are left in it until it cools. You can use a microwave oven for sterilization.
Preparation:
- Rinse prunes several times in slightly warmed water. Transfer them to a colander to drain excess liquid.
- The water is poured into an enamel pot.
- At medium temperature, bring it to a boil and pour sugar with constant stirring.
- After dissolving all the sugar grains, the heating is reduced, and then the prunes are transferred to the syrup.
- They continue to cook the fruits for 20 minutes.
Spread the prunes evenly over the jars. Pour in boiling syrup. Immediately roll up with scalded boiling water and dried lids. Turn the containers over on a towel, wrap them in a hermetically warm blanket. Leave to cool for several days. The compote is stored well in a cellar.
Compote without preservation
You can make a prune compote, which will not last long, but will allow you to enjoy a pleasant drink throughout the week.
Ingredients:
- dried prunes - 1 kg;
- filtered water - 2 l;
- medium-sized granulated sugar - 2 cups.
Preparation:
- Prunes, which are intended for compotes, must be thoroughly rinsed several times with cool running water.
- Measured granulated sugar is poured into an enamel pan.
- Pour in boiled water.
- Stir until sugar dissolves.
- Then the prunes are added.
- Boil at medium temperature.
- After active boiling of the compote, the temperature is lowered to the minimum value.
- Stew the compote for 20 minutes. During this period, the prunes should become soft.
Remove the pan from the stove and leave it on the table to cool. The compote is poured into glass containers and placed in the refrigerator.
With any method of preparation, prune compote will delight you with a pleasant taste and a rich dark blue hue.
