Ingredients:

  • red tomatoes - 1 kg;
  • medium fraction sugar - 2 tbsp. l .;
  • table salt - 1 tbsp. l .;
  • blackcurrant and cherry leaves - 3-4 pcs.;
  • small sweet pepper - 1 pc .;
  • garlic cloves - 2-3 pcs.;
  • a sprig of dill greens;
  • bay leaves - 2 pcs.;
  • black peppercorns - 5-6 pcs.;
  • half a lemon.

Preparation:

  • Place all the spices together with the washed leaves evenly on the bottom of a sterile jar.
  • Vegetables are washed and dried with a soft linen napkin. Pepper is cleaned of grains and stalks.
  • Place vegetables in a container for seasoning.
  • After pouring boiling water, it is kept for 10 minutes.
  • Sugar and salt are dissolved in the drained liquid with vigorous stirring. After a five-minute boil, pour in the juice of half a lemon. The tomatoes are poured with marinade, and then the container is rolled up.
To speed up the ripening of the finished pickled product, the tomatoes are pierced in the area near the stalk with a toothpick.

Sweet and sour pickled mixes

There are many recipes for making sweet pickled tomatoes. The originality of the taste is given by the use of additional varieties of vegetables or herbs.

With bell pepper

Basic Ingredients:

  • ripe raspberry dense tomatoes - 2 kg;
  • large fleshy bell pepper - 3 pcs.;
  • fresh foliage of currants, young horseradish, garden cherries - 3-4 pcs.;
  • dill umbrellas - 2 pcs.;
  • medium garlic cloves - 5 pcs.

For the marinade:

  • filtered water - 1.5 l;
  • table vinegar (7%) - half a glass;
  • table salt - 30 g;
  • granulated sugar - 125 g.

Preparation:

  • At the bottom of a sterile three-liter jar, put 3 cloves of garlic and half of the spices.
  • They place the punctured tomatoes with the peppers cut into quarters, freed from the grains.
  • Place the remaining seasonings on top.
  • Pour boiling water over. Withstand at room conditions until cool.
  • Then the liquid is boiled again. Pour into a container for a vegetable mix.
  • After 10 minutes, sugar and salt are poured into the liquid fraction poured into an enamel bowl. Boil a little after boiling, and then add vinegar.

Pour vegetables with marinade and immediately roll up the container.

With honey

Ingredients:

  • high-quality ripe cherry tomatoes - 1 kg;
  • garlic - 3-4 medium slices;
  • basil with dill - 2 branches each;
  • dried lavrushka - 2-3 pcs.;
  • black pepper - 4-5 peas;
  • hot pepper - 1 small pod.

For the marinade:

  • apple cider vinegar - 4 tbsp. l .;
  • table salt and granulated sugar - 25 g each;
  • liquid natural honey - 50 g;
  • filtered water - 2 liters.

Preparation:

  • Tomatoes washed and dried with a towel are pierced in the area of ​​the stalk.
  • Transfer them to a prepared jar with the addition of pepper, garlic, bay leaves, dill.
  • Water in an enamelled container is brought to a boil.
  • Add sugar and salt with stirring.
  • Pour the tomatoes with the prepared boiling brine and let stand for an hour.
  • The liquid component is again poured into an enamel bowl.

When the brine boils, add honey, vinegar and basil sprigs. Immediately, carefully pour the tomatoes with hot marinade, and then seal the container hermetically.

With carrot tops

For a three-liter jar, 2 kg of tomatoes will be required, which, after washing and drying, are placed in a container with the addition of elastic carrot tops rinsed in running water (3-4 branches).

Pour 0.5 liters of boiled water. After 15 minutes, pour the liquid into a saucepan or stewpan. After boiling, with stirring, add granulated sugar (125 g) and table salt of the middle fraction (35 g). When all the grains dissolve, pour in table (9%) vinegar (90 ml). Tomatoes with tops are immediately poured. Roll up with metal lids.

You can cook savory sweet tomatoes for the winter in various variations:

  • In an enamel bowl, bring 1.5 liters of filtered water to a boil. Add 3 sprigs of dill greens, black peppercorns, cloves, peeled garlic cloves (5 each). Put 3 kg of previously washed tomatoes, 2-3 bay leaves and 3-4 garlic cloves in a sterile jar. Pour in brine. Leave under a nylon lid for a quarter of an hour. Then the liquid is poured into a saucepan, heated, dissolved with stirring, 25 g of table salt, as well as 100 g of sugar. Bringing to a boil, pour in 30 ml of vinegar (9%). A container with vegetables is quickly filled with hot marinade and corked.
  • Dense small-sized ripe tomatoes, after washing, are pierced in the area of ​​the stalks. Sprinkle them with salt (2 tbsp. l.) and left in the cool without lighting for 5-6 hours. Then 2 liters of water are poured into the pan. Add 200 g of sugar, 2 tbsp. l. mustard seeds, 2-3 bay leaves, 1 tsp. l. peas of black pepper. They put it on the stove. At the first sign of boiling, spread 500 g of peeled onions. Cook for 15 minutes. The brine is filtered through double cheesecloth and cooled. Tomatoes, together with onions, are laid out in glass jars, poured over with cooled brine and kept cool for 3 days. After that, half a glass of vinegar (7%) is poured into the boiled liquid, the vegetables are poured hot and rolled up.
  • Unripe tomatoes are also used for harvesting. You will need to cut 3 kg of high-quality green tomatoes into half rings. Additionally, bell peppers, juicy carrots, peeled onions are chopped into strips. These ingredients are taken in 1 kg. Combine the vegetables in an enamel bowl. Pour in 100 g of salt, stir and leave for 10 hours. The released juice is poured into a saucepan. After boiling, add a glass of granulated sugar and sunflower oil, pour in 150 ml of nine percent vinegar. Transfer the vegetable mixture to the juice and cook it with stirring for a quarter of an hour. Distribute hot into small sterile jars. After rolling, leave under a warm blanket until it cools.
