Good afternoon, my reader. There are many ways to preserve cucumbers. These wonderful vegetables are permanent residents of almost any cellar. In addition to the classical methods of salting them, there are a lot of those that are less common, but also give excellent results at the exit. And today I want to offer you a recipe for pickled cucumbers in a very unusual way. Or rather, prepared "in themselves."

In this preservation, the crispy fruits of this vegetable are placed together with the cucumber "minced meat". This dill-and-garlic-flavored snack reminds us of the taste of barreled pickles. With the only slight difference that it is more aromatic and juicy. Convenient in this recipe is also the fact that you can safely use even overripe fruits that are not suitable for ordinary pickling. Having passed such vegetables through a grater, we get an excellent salty gruel, which can be used as a snack and added to various salads.
Recipe for pickling cucumbers in your own "minced meat"
Required products: - cucumbers, - for one liter of grated cucumbers - one tablespoon of salt, - garlic - five cloves, - dill - put to taste.
Cooking method
- First, we sort the available vegetables. We set aside separately those that we put in the jars entirely, and those that will go for "minced meat". The first include strong, young and the same (desirable, but not necessary) fruit size. Overripe and non-standard - this is the second group. Then we will pass them through a grater.
- We sterilize the jars and put the washed dill on their bottom. You can take both umbrellas and greens from it. We clean the garlic and put half of its cloves on the bottom of the glass container.
- We grate the cucumbers that are set aside for “minced meat” on a coarse grater. We fill them with salt in the indicated proportions. We mix the resulting mass.
- We put good fruits lying in a jar on top of the spices already there. Pour one third of the ground "minced meat" onto them.
- We ram in such a way that the salt mass falls to the very bottom, including. Then we put the second layer of good cucumbers. And also fill it with "minced meat". And again we ram. Top up the remaining mixture of grated fruits to the edges of the jar.
- We roll up the lids and take the jars to the refrigerator (cellar, pantry).
Useful Tips
- To make vegetables crunchy better, in addition to dill, you can add another one.
- You can add horseradish, cherry, currant leaves to the preparation (separately or all together). You can also put grape berries (five pieces per liter).
- You can eat this snack within a few days after making it. However, the longer it stands, the more aromatic and tasty it will become.
