# 1: Citric acid is a savory supplement

For this recipe, it is best to use 1.5 liter jars. Initially, you need to soak the cucumbers in ice water so that they are saturated with moisture, this will allow them to be crisper. Banks are prepared as follows: you need to sterilize each container, and pour boiling water over the lids.

Ingredients:

  • Dill (dried dill umbrellas would be the best option).
  • Mustard seeds.
  • Garlic.
  • Allspice peas.
  • Bay leaf.
  • Lemon acid.
  • Salt (not iodized, but large rock salt).

Cooking method:

Thoroughly rinse the soaked cucumbers and cut off all the butts. Then, at the bottom of the sterilized jars, you need to put all the spices mentioned above, except for citric acid, we will need it a little later. We spread the cucumbers tightly (it is better to place them on the bottom while standing), and then just fill in the voids. For a tighter fit, it is best to use different sizes.

The next step is to pour boiling water over the jars filled with cucumbers and let them stand for a while until the water becomes warm, then drain all the water into the pan. The second time, pour the cucumbers with boiling water and let it brew again, then drain again. You can start preparing the fill.

For each liter of brine, add 2 tablespoons of salt and 2 tablespoons of sugar. We add citric acid directly to the jars as follows: add about half a teaspoon to a 1 liter jar, put one teaspoon in 1.5 and 2 liter jars. Then fill the jars with brine brought to a boil, close the lid, turn over and cover with a warm blanket.

# 2: Gherkins

This option is perfect for preparing blanks in 1 liter cans.

Ingredients per 1 liter can:

  • 600 g of small cucumbers.
  • Horseradish leaf.
  • Garlic - 2 cloves.
  • Allspice peas - 3-4 things.
  • Dill (dried dill umbrellas would be the best option).
  • Bay leaf - 2 pieces.
  • Sugar - 1.5 tablespoons.
  • Salt - 1 tbsp l.
  • Citric acid - 2/3 tsp l.

Cooking method:

We leave the cucumbers in cold water, preferably for 5-6 hours, then wash them thoroughly and cut off the butts if desired, but if the cucumbers are bitter, then this is a prerequisite. We sterilize the jars and soak the lids in boiling water. The next step is to fill the jars with all the prepared spices and put cucumbers on top of them, but in no case squeeze them.

Then pour boiling water over the cucumbers, let them stand for a while and pour into a saucepan, repeat this step two more times, and on the third add salt and sugar to the brine drained from the jars, and then boil. At this time, add citric acid to the jar, and then fill it with boiled brine. Close with a lid, turn over and cover with a warm blanket on top.

# 3: For spicy lovers

Ingredients per 3 liter can:

  • Cucumbers - 2 kg.
  • Garlic - 6 cloves.
  • Currant or cherry leaf - 2 pcs.
  • Horseradish leaf.
  • Dill umbrella - 2 pcs.
  • Water - 1.3 liters.
  • Sugar - 150 g.
  • Salt - 75 g.
  • Vodka - 3 tbsp. l.
  • Tarragon twigs, basil.
  • Coriander peas.
  • Bay leaf - 2 pcs.

Cooking method:

Process cucumbers, jars and lids in the same way as in the previous two recipes.

Then we put greens on the bottom of the jar, then fill it with cucumbers, add the remaining spices and pour boiling water. If you do not want to suffer with sterilization, then simply carry out a triple pouring, that is, pour boiling water 1 time for 10 minutes, the second time exactly repeats the first, and the third time with brine. Before pouring the brine into each jar, add a teaspoon of citric acid. Then we repeat the twisting of the cans, as in the previous recipes.
