Cucumbers in liter jars

The main component of this blank will, of course, be cucumbers. Give preference to fresh small vegetables up to 15 centimeters in length, whose flesh is dense in the cut, without large seeds. Then proceed according to the algorithm below:

Cucumbers with lemon

  • Fill a liter jar with cucumbers, pour boiling water over and stand for exactly half an hour.
  • Drain water into a saucepan, add 1 tsp. l. sugar, 1 tbsp. l. salt and boil again.
  • Pour the marinade over the cucumbers, add citric acid on the tip of a knife and roll up.

Turn the jar over and wrap it up, so leave it for a day. Store in a cool place for a long time.

Cold salting

Soak the cucumbers in cold water as usual for 5-10 hours. Then put them in liter jars with spices (5 black peppercorns, 3-4 cloves of garlic, a pinch of hot pepper) and herbs (dill inflorescence, currant leaves, cherries and horseradish).

1 tbsp. l. Dissolve the salts in a half-liter container of cold water and pour into jars with cucumbers. If the can is not full, add water up to the neck. Store in a cellar or refrigerator. After five days you can already eat them.
