Cucumbers in liter jars
The main component of this blank will, of course, be cucumbers. Give preference to fresh small vegetables up to 15 centimeters in length, whose flesh is dense in the cut, without large seeds. Then proceed according to the algorithm below:
- Prepare herbs and spices: a few cloves of garlic, allspice, dill and parsley, mint leaves, horseradish, currants and cherries.
- Place spices and a layer of herbs on the bottom of a glass liter jar. Fill halfway with cucumbers and repeat the layer of spices and herbs. Then the cucumbers, and at the very top, the third green layer.
- Prepare a brine: for 1 liter of water 2 tablespoons of salt with a slide. Bring it to a boil and fill the jars with it to the top, leave them in this state for 2-3 days. When the time is up, drain the water into a saucepan, boil it again and pour it into the jars. Then roll them up.
Store the workpieces in a cool place. Serve as a cold appetizer and use in salads.
Cucumbers with lemon
We present to your attention another recipe for making delicious pickles without adding vinegar. At the exit, such cucumbers have an unusual smell, they taste not salty, but slightly spicy, bright green.
All ingredients used for preservation are harmoniously combined. There is no vinegar smell as it has been replaced by citric acid. Below is a quick guide to action:
- For a liter seaming, prepare 600-700 grams of cucumbers. Pick up cucumbers not smooth, but with pimples, only then they will be crispy.
- Soak them in cold water for 5-6 hours.
- In a prepared sterilized jar, put carrots, cut into small pieces, a few cloves of garlic, peeled, a leaf of horseradish, 3 black peppercorns, a few rings bitter pepper.
- Fill a liter jar with cucumbers, pour boiling water over and stand for exactly half an hour.
- Drain water into a saucepan, add 1 tsp. l. sugar, 1 tbsp. l. salt and boil again.
- Pour the marinade over the cucumbers, add citric acid on the tip of a knife and roll up.
Turn the jar over and wrap it up, so leave it for a day. Store in a cool place for a long time.
Cold salting
Soak the cucumbers in cold water as usual for 5-10 hours. Then put them in liter jars with spices (5 black peppercorns, 3-4 cloves of garlic, a pinch of hot pepper) and herbs (dill inflorescence, currant leaves, cherries and horseradish).
1 tbsp. l. Dissolve the salts in a half-liter container of cold water and pour into jars with cucumbers. If the can is not full, add water up to the neck. Store in a cellar or refrigerator. After five days you can already eat them.
