So, for the salad we need the following ingredients:

  • the cucumber themselves, fresh, only from the garden - 4 kg,
  • vinegar (9%) - 1 tbsp.,
  • sugar - 1 tbsp.,
  • vegetable oil, usually sunflower oil is chosen, but it is important that it is deodorized - 1 tbsp.,

  • salt, it is advisable to choose finely ground - 1/3 tbsp.,
  • ground black pepper - 1 tsp l.
From these products comes out 7 half-liter jars of salad.

  • Well, wash the cucumbers, dry them. Cut off the ends, then cut each vegetable lengthwise into four parts. If the vegetables are large, then you can cut first across, and then along.
  • Put the cucumbers in a bowl, add salt, sugar, mustard and ground pepper.
  • Then add vinegar and vegetable oil.
  • Mix vegetables with marinade thoroughly.
  • Cover the bowl with cling film and leave the salad to marinate for 5-6 hours (at room temperature).
  • Then, in the pre-prepared, washed and dried jars, we put the cucumbers tightly enough.
  • Pour the brine on top, which stood out during the pickling process, so that it completely covers the cucumbers. We cover the jars with lids, but do not roll them up.
  • We take a wide saucepan, spread a cloth or towel on the bottom, put our blanks inside and pour water over the hangers of the cans. We sterilize the blanks for 40 minutes from the moment the water boils. It can be sterilized both in a water bath and in a microwave oven or oven. Some housewives say that they do not like sterilization, since it takes a lot of time, so they try to avoid it. The fact is that often preservation is stored in an apartment where the temperature conditions are higher than necessary, because of this it often happens that the lids swell and the product disappears, or a microbe may appear in the cans, which leads to a dangerous disease - botulism. Therefore, it is better to spend a little more time, sterilize, but then you can store your preparations on the shelf in the pantry throughout the year and enjoy the taste of vegetables, berries and fruits in any moment.
  • Next, we roll up the cans, turn the lids down and cover them with a blanket so that they cool longer. Best left overnight.
  • After that, you can put the ready-made salad for storage, preferably in a cool place, in the conditions of an apartment you can store jars in the pantry.
