My grandmother, for example, always said about this that summer days - winter is fed. And now, when I roll up a new jar of homemade pickles, I always remember with gratitude these correct words. So the recipe for lightly salted cucumbers without sterilization also got me from my beloved grandmother. The resulting crunchy cucumbers are great. I make this snack all the time. After all, these simple vegetables can be eaten on their own, and served with your favorite dish, or added to some salad. It is very easy to prepare them. You just need to choose the right variety of cucumbers, otherwise all efforts can go to waste.
The fact is that some housewives canned cucumbers of salad varieties, which is absolutely impossible to do. For such a roll, you need to use small fruits with pimples. Such cucumbers withstand salting well and do not cease to be elastic and very crispy.
Cucumbers without sterilization
To fill the preparation with additional flavors, put various herbs directly into the jar: horseradish, dill, basil or parsley.
Products (for 1 liter of brine): - cucumbers (seaming varieties, ripe) - 1.5 kg, - young garlic - 3 prongs, - herbs - one bunch, - vinegar (9%) - 60 ml, - sugar - 1 tbsp. l., - salt (fine) - 2 tbsp. l.
Cooking method
- We wash the cucumbers several times in cold water. Then we cut off their ends on both sides and transfer them immediately to a large saucepan. It is necessary that the vegetables are placed in a container in one layer.
- Boil water in another saucepan. And pour boiling water into cucumbers. It is necessary to pour them so that the water completely hides the fruits.
- After 20 minutes, drain the cooled water from the cucumbers.
- Then again fill the cucumbers with the same water, and after 15 minutes we pour it back into the pan. Turn on the fire under the pan, add salt and sugar and stir everything. As soon as the liquid in the pan boils, immediately remove it from the stove.
- Wash the prepared jars thoroughly. We put herbs and garlic cloves in them.
- Next, transfer the cucumbers to the jar. Pour hot brine on top and add vinegar.
- Then we immediately roll the lids on the jars and wrap them with a warm blanket or blanket. This is necessary so that the cucumbers cool as slowly as possible and better absorb the fresh pickle.
- After waiting a day, we take our conservation to the place of permanent storage.
