How to independently prepare dried hot peppers for the winter

Peppers can be dried using an ordinary kitchen oven. First, wash the pods thoroughly and wipe them dry. Cut the peppers into halves, especially the large ones into quarters. Remove seeds and stalks. It is better to work with the fruits of hot peppers in rubber gloves, because burning juice may remain on the hands. In the process, do not wipe the sweat from your forehead with your hands, do not scratch your eyes and do not touch the mucous membranes to avoid burns.

Line a baking sheet with baking paper and place the peppers in 1 layer on it. Place it in an oven preheated to 50 degrees and leave the door slightly ajar - this will allow the peppers to dry out, and not fry.

An old method is natural drying of fruit strung on a string. Place the threads with fruits in a warm room with good air circulation and low humidity. Wash the pods, wipe dry, secure them with a string or thread. You can use a needle to thread the thread through the peppers in the stalk area. To dry evenly, make sure that the pods are not sticky to each other.

The easiest ways to dry

The pods dry excellently on a rack heated from below:

  • When using an electric dryer, the process will take about a day. In this case, it is necessary to periodically stir the peppers.
  • If using special ovenware with a gas burner rack, spread the peppers in one layer and heat over medium heat for about 2 or 3 hours. Then lay them out on paper and leave to dry completely.

An even easier drying method is on a sunny windowsill. Wash and dry the pods, lay them out on paper in one layer and place them on the windowsill (it is advisable that children and animals do not have access there). It will take 2 to 3 weeks to dry completely. Stir the peppers periodically to dry evenly.

Remember that dried fruit will spoil if excessive moisture is present. It is best to store them at room temperature in cloth bags or paper bags. When storing in glass or plastic containers, do not close the lid, but cover them with gauze. Bunches of dried peppers attached to a string or rope can simply be left hanging in the kitchen - they will decorate the interior and will always be at hand.

Important nuances

For ground pepper, load the dried pods into a coffee grinder or food processor and grind to the desired fraction. Pour the resulting powder into a dry and airtight container and close tightly. Thoroughly wash the bowl and knives that have come into contact with hot peppers.

Different varieties of peppers have different degrees of pungency - this is caused by differences in the content of the alkaloid capsaicin, which gives the fruit a pungency. In general, intact pods from plants that have grown in full sun and have been watered abundantly are sharper.

You can add spice to the seasoning by leaving the seeds in the pods. If you want a moderate pungency, it is best to remove them before drying.
